ONE TERROIR
As a result of extensive research, of the 127 hectares that make up the Don Melchor vineyard, seven plots of Cabernet Sauvignon and small plots of Cabernet Franc, Merlot and Petit Verdot are subdivided.
Each of them, in turn, has been divided into micro-plots, in such a way that each one is worked in a specific and detailed way, responding to the needs of each plant, row by row, in order to achieve the perfect balance in accordance with the climatic characteristics of each year.
There is a large number of factors that influence this determination, among them the content, size and distribution of the stones in the different horizons, the growth of the roots, the content of clays, sands, silts, nutrients – such as nitrogen, phosphorus, potassium , carbonates and calcium–, as well as the content of organic matter and water retention capacity, among others, which ultimately influence the different expressions found in the wines.
